President and CEO Albert Shim is a chef by trade with 16 years of restaurant experience across bistros, catering, museum openings, galas, upscale casual breakfast, and high-volume restaurants. He developed the EggBred menu and concept and opened the first location in La Habra, California in October 2020. The breakfast-and-lunch-only operating model has let Albert perfect the menu while getting himself and his employees home in time for dinner.
Opening in the middle of COVID-19 wasn't easy, but constant improvement has surpassed expectations — it's not unusual today to see lines out the door. The brand also stays involved in the community, with donations to La Habra baseball, the AMA Club at CSU Fullerton, St Jude hospital, and the La Habra Chamber of Commerce.
